Nothing sits waiting. Rice is seasoned for the service, the rolls are built when the order lands, and the fish is cut a few seconds before it reaches you - which is why the crisp toppings are still crisp when the plate arrives.



Hito is a small Japanese restaurant on Calle Galileo, a street running down towards Las Canteras. It is built around a sushi counter: fish bought whole where it can be, rice seasoned for each service, and a carta that stays deliberately short so everything on it is made properly.
The Restaurant
The loin arrives whole from Balfegó and is broken down here at the counter, by the same people who serve it. From that one block come nigiri, sashimi, tataki and usuzukuri, cut to order through the service.
